For me, the environment (comfy bed, hot showers, nice place to work in) are a vital part of any weekend retreat.
The food is as important to me as anything and with that in mind, asking my wonderful talented friend Liz to provide the food for us is very exciting.
This is what she has in mind for us for your main meals.
*NOTE: We will provide a continental breakfast of pastries and yoghurt and fruit, teas and coffee for breakfast.
Friday - Tea (on arrival)
Traybake - parsnip & coconut cake with cream cheese frosting
Coaltown coffee and specialist tea
Friday Supper
Pre-dinner dips and chips - hummus, baba ganoush with homemade pita chips
Butterbean and chorizo casserole (veggie option with roast squash & feta), served with homemade garlic & rosemary focaccia and Glebelands green salad
Mini lemon tarts with greek yoghurt
Saturday - Lunch
Creamy winter white bean, fennel & kale soup with Bara Menyn or Crwst sourdough and caws Teifi cheese & pickles
Saturday Supper
Pre-dinner nibbles - crostini with smoked mackerel pate or beetroot borani
Homity pie, braised winter greens, root veg mash
Chocolate brownie cheesecake with blueberry compote
Sunday Lunch
Sweet potato, corn & black bean empanadas with sauerkraut and Glebelands salad.
